The classic combination for this slightly brown (hence its English name) and not-too-fluffy cake is to serve it with vanilla ice cream. And although classic, it's still incredibly delicious, so we suggest you try it this Christmas. But with an added bonus: everything is homemade, and you can make it yourself with the satisfaction of eating a dessert you've made from start to finish. Ready to get started? 

 

Ingredients (4 people):

For the Brownie:

  • 100 ml of eggs
  • 100 g sugar
  • 100 grams of butter
  • 125g of 70% cocoa chocolate
  • 30g of chopped walnuts
  • 40 gr de harina

For vanilla ice cream:

 

Preparation:

The first thing we'll make is the brownie. To do this, melt the chocolate and butter (preferably butter, not margarine) in a double boiler. Once the chocolate and butter are completely melted and well combined, let it cool slightly at room temperature.

In a separate bowl, whisk the eggs together with the sugar until they are fluffy and a very light yellow color.

Once the chocolate and butter mixture has cooled slightly, add the chopped walnuts. Then, gradually add the whipped egg: pour in a portion of the whipped egg and mix it with the chocolate using a spatula or scraper. Once incorporated, add another portion, and continue until all the mixture is used.

Finally, add the flour, preferably sifted to ensure it blends better and doesn't form lumps. Mix it in the same way as the egg: with folding motions. This prevents the egg's fluffiness from deflating and ensures the mixture remains light and airy.

Pour the mixture into small molds if you want to make individual desserts, or into a larger one if you prefer to cut it into pieces later. Bake at 180ºC for 15 minutes, but this will depend somewhat on your oven. The best tip is to insert a toothpick into the cake halfway through baking: if it comes out clean, it's done.

On tiempo While the baking is in progress, we can start preparing the ice cream: mix all the ingredients in a large bowl until the mixture is smooth and lump-free. You can use a whisk. Once you have it, pour it into a container with sufficient depth. If you don't have an ice cream maker at home, you can put it in the freezer. To prevent ice crystals from forming and altering the texture of the ice cream, you can take it out after 4 hours of freezing and stir it lightly with a spatula to break up any ice crystals and ensure the cold is distributed evenly.

The dessert is served by placing the brownie on a plate and topping it with one or two scoops of vanilla ice cream. We can decorate it with any type of syrup we like, melted chocolate, or chopped nuts—whatever the diner prefers!
