Ingredients (4 people):

  • 24 chestnuts (6 per person)

  • ½ liter of whole milk

  • 50gr of butter

  • Sal Island

  • Pepper

 

Preparation:

Roast the chestnuts in the oven. Before baking, César recommends making a small incision in the skin of the chestnuts to prevent them from exploding from the heat. When they are tender, peel the chestnuts and crumble them with your hands.

In a saucepan, melt the butter over low heat. The chef at Alfonso Catering insists on using real butter, rather than the plant-based substitutes found on the market.

Once the butter is melted, add the chopped chestnuts and sauté briefly. Add the milk and let it reduce for about 30 minutes over medium heat until the cream thickens.

Once it has the desired texture, whisk the mixture and strain it using a fine-mesh sieve. Add salt and pepper to taste.
