Ingredients (per person):

20 cl. of red wine

1/2 Golden Delicious apple

180 grams of duck breast

3 dl. of sherry vinegar
Preparation:
Reduce the wine with the vinegar and sugar until you have a smooth, syrupy sauce. Core and peel the apples and slice them into 1-centimeter-thick rounds. Trim the fat from the duck breast and cut it into 2-centimeter-thick slices. Grill the apples on a griddle and do the same with the duck breast, searing it on both sides. Plate the duck breast, the apples, and a spoonful of the wine sauce on the side. Garnish with a sprig of rosemary. Your guests will want seconds.
