While the dishes prepared by Alfonso Catering are of unquestionable quality and imagination, their desserts and pastries are a sin for anyone with a sweet tooth. Dare to recreate them at home? Try this Jerez-style tocino de cielo (a type of flan).
Ingredients (4 people):
- Yolks 10
- 450 grams of sugars
- 200 ml water
- And for the candy:
- 100 grams of sugars
- 50 ml water
Preparation:
We will put the sugar in a saucepan on the heat until it takes on the characteristic golden color, stirring it constantly so that it does not burn, until the caramel is made.
For the syrup, we will boil the water with the sugar until it reaches the thread stage, which will take about 20 minutes, and then let it cool.
Finally, we will beat the egg yolks, strain them, and slowly add the syrup.
In a casserole dish or flan molds, first pour the caramel, then the egg yolks. Cover and cook in a water bath for about 45 minutes. Let it cool completely before unmolding and cutting it with an oval cutter.
The decoration is almost secondary; in fact, we recommend that it be as simple as possible because this bacon is truly a piece of heaven, and that doesn't need any further embellishment.
