Ingredients (4 people):

  • 800gr of galleys
  • 1 medium white onion
  • 2 medium tomatoes
  •  1 Italian pepper
  • 1dl of olive oil
  • Sal Island
  • Pepper
  • A splash of Jerez brandy (optional)

Preparation:

Freeze the mantis shrimp before you start preparing the dish. This will ensure they are firm for the next step: cutting the skin with scissors to extract the meat from the whole mantis shrimp.

We set aside the mantis shrimp meat for later. Separately, we put the shells of these crustaceans in a container with plenty of hot water and bring it to a boil to make a smoked or seafood brothAdd the brandy if desired. Let the broth reduce for one hour and strain.

Dice the onion, tomatoes, and bell pepper. Sauté the onion first in a pot with enough oil to cover the bottom. When it's almost translucent, add the bell pepper, and when it's almost tender, add the tomato. Blend the mixture once it's cooked.

Incorporate smoked Pour the liquid into the pot and simmer until the soup reduces and thickens. Adjust the seasoning with salt and pepper.

César insists we place the skinned mantis shrimp carcasses on top of the hot soup just a minute before serving, so they cook slightly in the residual heat. Grab your spoons and dig in!
